2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon

1 ½ cups brown sugar
4 large eggs

½ cup whole milk
2 cups apples peeled cored and diced

For the Caramel Glaze

½ cup unsalted butter
1 cup brown sugar
¼ cup heavy cream
¼ teaspoon salt
½ teaspoon vanilla extract


Instructions

Prepare the Apples

Peel core and dice apples into small cubes
Toss them with cinnamon and brown sugar and set aside

Make the Cake Batter

Preheat oven to 325°F 163°C and grease a bundt or loaf pan
In a bowl whisk together flour baking powder salt cinnamon and nutmeg
In another bowl beat butter and brown sugar until light and fluffy
Add eggs one at a time mixing well after each addition
Mix in vanilla extract
Gradually add dry ingredients alternating with milk and mix until just combined
Fold in the spiced apples gently to avoid overmixing

Bake the Cake

Pour batter into prepared pan and smooth the top
Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean
Let cake cool in the pan for 10 minutes then transfer to a wire rack to cool completely

Prepare the Caramel Glaze

In a saucepan melt butter over medium heat
Add brown sugar and stir until dissolved
Slowly pour in heavy cream while stirring constantly
Let the mixture simmer for 3-4 minutes until thickened
Remove from heat and stir in salt and vanilla extract

Glaze and Serve

Drizzle warm caramel glaze over cooled cake
Let it set for 10 minutes before slicing
Serve with vanilla ice cream or a cup of coffee for the perfect treat
