Description

A rich and hearty Alice Springs Chicken casserole made with juicy chicken, smoky bacon, honey mustard sauce, and melted Colby Jack cheese for the ultimate comfort meal.


Ingredients

4 boneless, skinless chicken breasts, cut into cubes
1 tablespoon olive oil
Salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon onion powder
6 slices cooked bacon, crumbled
2 cups shredded Colby Jack cheese
1/2 cup sliced mushrooms (optional)
1/2 cup mayonnaise
1/4 cup Dijon mustard
1/4 cup honey
1 tablespoon lemon juice


Instructions

Preheat the oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add chicken and cook until lightly browned, seasoning with salt, pepper, garlic powder, and onion powder.
In a bowl, whisk together the mayonnaise, Dijon mustard, honey, and lemon juice to make the honey mustard sauce.
Place the cooked chicken in a 9×13-inch casserole dish.
Drizzle the honey mustard sauce evenly over the chicken.
Top with sliced mushrooms, if using.
Sprinkle crumbled bacon evenly over the top.
Cover with shredded Colby Jack cheese.
Bake for 25–30 minutes, or until the cheese is melted and bubbly.
Let sit for 5 minutes before serving.

Notes

For extra flavor, marinate the chicken in the honey mustard sauce for 30 minutes before baking. Use rotisserie chicken to save time. Swap Colby Jack for cheddar or Monterey Jack if desired.
