4 boneless skinless chicken breasts
4 slices bacon cooked until crispy
1 cup mushrooms sliced
1 cup shredded cheddar and Monterey Jack cheese blend
2 tablespoons olive oil
Salt and black pepper to taste
Honey Mustard Sauce Ingredients
1/4 cup honey
2 tablespoons Dijon mustard
1/4 cup mayonnaise
1 teaspoon lemon juice
Instructions
Pound the chicken breasts to an even thickness
Season both sides with salt and black pepper
Marinate the chicken in half of the honey mustard sauce for at least 30 minutes for extra flavor
Heat a skillet over medium-high heat and add olive oil
Cook the chicken for 4 to 5 minutes per side until golden brown and cooked through
Remove from the skillet and set aside
In the same skillet add a little more oil if needed and sauté the mushrooms until tender and slightly browned
Place the cooked chicken in a baking dish
Top each piece with crispy bacon sautéed mushrooms and shredded cheese
Preheat the oven to 375°F
Bake for 10 to 15 minutes until the cheese is melted and bubbly
Drizzle with the remaining honey mustard sauce before serving
Pair with a side of mashed potatoes or steamed vegetables
Notes
For extra flavor let the chicken marinate in the honey mustard sauce overnight
Use turkey bacon for a leaner option
If you prefer a spicier kick add a pinch of cayenne pepper to the honey mustard sauce
