Description

Alice Springs Chicken is a deliciously rich dish featuring grilled chicken breasts topped with crispy bacon, sautéed mushrooms, and melted cheese, all drizzled with a creamy honey mustard sauce. This easy-to-make restaurant-style recipe is perfect for family dinners or special occasions.

For the Chicken and Marinade

4 boneless, skinless chicken breasts (pounded to even thickness)

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil (for grilling)

For the Honey Mustard Sauce

1/4 cup honey

2 tablespoons Dijon mustard

1/4 cup mayonnaise

1/2 teaspoon garlic powder

For the Toppings

6 slices bacon (cooked until crispy)

1 1/2 cups mushrooms (sliced)

2 tablespoons butter or olive oil (for sautéing mushrooms)

1 1/2 cups shredded Monterey Jack and Cheddar cheese mix

1 teaspoon fresh parsley (optional, for garnish)


Instructions

Step 1: Prepare the Honey Mustard Sauce

In a bowl, whisk together honey, Dijon mustard, mayonnaise, and garlic powder until smooth.

Reserve half of the sauce for drizzling later and use the rest for marinating.

Step 2: Marinate the Chicken

Season the chicken breasts with salt and black pepper.

Place the chicken in a resealable plastic bag or shallow dish and coat with half of the honey mustard sauce.

Cover and refrigerate for at least 30 minutes (or up to overnight for more flavor).

Step 3: Cook the Chicken

Heat 2 tablespoons of olive oil in a skillet over medium heat.

Remove the marinated chicken from the fridge and cook for 6–8 minutes per side, or until the internal temperature reaches 165°F (75°C).

Transfer the cooked chicken to a baking dish.

Step 4: Sauté the Mushrooms

In the same skillet, melt butter over medium heat.

Add sliced mushrooms and sauté for 3–4 minutes, or until softened.

Set aside for assembling.

Step 5: Assemble the Chicken

Place the cooked chicken in a baking dish.

Top each piece with crispy bacon slices, sautéed mushrooms, and shredded cheese.

Drizzle with a little more honey mustard sauce.

Step 6: Bake Until Cheese Melts

Preheat the oven to 375°F (190°C).

Bake for 10–15 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let the dish rest for 5 minutes.

Step 7: Serve and Enjoy

Garnish with fresh parsley if desired.

Serve with mashed potatoes, roasted vegetables, or a side salad.

Notes

Marinating the chicken longer enhances the flavor.

Freshly shredded cheese melts better than pre-packaged shredded cheese.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
