Description
This four cheese egg souffle is a fluffy, savory, and elegant brunch dish made with whipped eggs, parmesan, goat cheese, mozzarella, and gruyère.
Ingredients
6 large eggs, separated
1/2 cup whole milk
1 tablespoon butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon garlic powder
1/4 cup grated parmesan cheese
1/4 cup grated gruyère cheese
1/4 cup shredded mozzarella cheese
1/4 cup crumbled goat cheese
Butter and flour for greasing the souffle dish
Instructions
Preheat oven to 375°F (190°C) and butter and flour a souffle dish.
In a small saucepan, melt butter over medium heat and whisk in flour to form a roux.
Slowly add milk, whisking constantly until the mixture thickens. Remove from heat.
Stir in parmesan, gruyère, mozzarella, goat cheese, salt, pepper, nutmeg, and garlic powder. Let cool slightly.
Separate the eggs and whisk the yolks into the cheese mixture.
In a clean bowl, beat egg whites until stiff peaks form.
Fold egg whites gently into the cheese mixture in three additions.
Pour the mixture into the prepared dish and bake for 30 to 35 minutes until puffed and golden.
Serve immediately for best texture and rise.
Notes
Use room temperature eggs for better volume when whipping whites. Do not open the oven door during baking to prevent deflation. You can swap cheeses like fontina or cheddar for variety.
