Large eggs 3
Tomatoes ripe and juicy 2 medium
Cooking oil 2 tablespoons
Green onions chopped 2 stalks
Garlic minced 1 clove
Soy sauce 1 teaspoon
Sugar ½ teaspoon
Salt ½ teaspoon
Black pepper ¼ teaspoon
Water 2 tablespoons
Optional Sesame oil ½ teaspoon


Instructions

Wash and chop the tomatoes into wedges or small chunks
Crack the eggs into a bowl add salt and whisk until well combined
Heat 1 tablespoon of oil in a pan over medium heat
Pour in the beaten eggs and cook stirring gently until just set then remove from the pan
In the same pan add the remaining oil and sauté the minced garlic until fragrant
Add the chopped tomatoes and cook for 3 to 4 minutes until they release their juices
Return the scrambled eggs to the pan and gently mix with the tomatoes
Add soy sauce sugar and black pepper stirring to combine
Let it cook for another minute then remove from heat
Garnish with chopped green onions and serve immediately

Notes

For extra fluffy eggs whisk in a splash of water or milk before cooking
Use ripe vine-ripened tomatoes for the best flavor and texture
If the dish is too watery let the tomatoes simmer longer to reduce excess liquid
For a sweeter taste increase the sugar slightly
