Description
These easy banana chocolate chip pancakes are made with ripe bananas, flour, milk, eggs, and chocolate chips for a fluffy, flavorful breakfast favorite.
Ingredients
1 cup mashed ripe bananas (about 2 bananas)
1 cup all-purpose flour
1 tablespoon sugar (optional)
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup milk (dairy or non-dairy)
1 large egg
1 teaspoon vanilla extract
1 tablespoon melted butter or coconut oil
1/2 cup mini chocolate chips
Instructions
In a large bowl, mash the bananas until smooth.
Add egg, milk, vanilla, and melted butter, whisk until combined.
In a separate bowl, mix flour, sugar, baking powder, cinnamon, and salt.
Add dry ingredients to wet mixture and stir until just combined.
Fold in the chocolate chips and let the batter rest for 5 minutes.
Preheat a non-stick skillet or griddle over medium heat.
Lightly grease the surface and pour 1/4 cup of batter for each pancake.
Cook until bubbles form on the surface, then flip and cook 2–3 more minutes.
Repeat with remaining batter and serve warm.
Notes
Use very ripe bananas for better sweetness and texture. Mini chocolate chips melt faster and distribute more evenly. Substitute oat flour for a gluten-free option. Batter can be made ahead and stored in the fridge for up to 24 hours.
